Ingredients :-

2 potatoes.

1/2 bowl cauliflower.

1/2 bowl carrot.

1/2 bowl green peas.

1 finely chopped onion.

2 tablespoons grated coconut.

2-3 green chillies.

2 tablespoons ginger-garlic paste.

1 teaspoon garam masala.

1 teaspoon cumin seeds.

1 teaspoon mustard seeds.

2 bowl fresh coconut milk.

Coriander leaves.

Some curry leaves.

Oil.

Salt as per taste.

Procedure :-

  1. First of all cut all veggies into pieces. Keep it aside.
  2. Take a mixer jar. Add grated coconut, green chilies, cumin seeds, ginger-garlic paste and blend it to a smooth paste.
  3. Heat a kadhai. Add 2 tablespoons oil in it.
  4. Add cumin seeds, mustard seeds, curry leaves and chopped onion into heated oil. Saute it properly.
  5. Then add previously made grinded masala. Fry it nicely.
  6. When it starts separating the oil, add 1 teaspoon garam masala and saute it.
  7. Now add all veggies and coconut milk. Stir well.
  8. At last add salt as per your taste. Cover kadhai with a lid and allow it to cook till veggies become nice and tender.

Serving Method :-

Transfer vegetable stew into a serving bowl. Garnish with chopped coriander leaves and serve hot along with appam or idli.

Notes:-

  1. You can use vegetable stock in vegetable stew.
  2. Ginger is most essential.
  3. Use olive oil for more taste.
